Ingredients:

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Cookie Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed (or strawberry jam for the filling)

Instructions:

For the Cheesecake Filling:

  2. Form the mixture into 16 small balls (about 1 teaspoon each) and place them on a lined baking sheet.
  3. Freeze the cheesecake balls for about 30 minutes or until firm.

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
