Instructions

  1. Prepare the Mixer: Place the egg whites and cream of tartar in the bowl of a stand mixer. Ensure the bowl and whisk are completely grease-free to help the egg whites whip properly.
  2. Make the Sugar Syrup:
    • In a medium, heavy-bottomed saucepan, add the water, granulated sugar, and corn syrup.
    • Stir over low heat until the sugar dissolves completely. Do not let the mixture simmer until the sugar has fully dissolved.
    • Insert a candy thermometer into the pot and heat the mixture over medium heat without stirring. Allow it to simmer until it reaches 240°F (120°C). If the syrup forms crystals, gently swirl the pan but avoid stirring.
  3. Whip the Egg Whites:
    • While the sugar syrup is heating, turn on your mixer to medium speed and whip the egg whites until soft peaks form (approximately 3-4 minutes).
    • Once soft peaks are achieved, reduce the mixer speed to medium-low.
  4. Incorporate the Syrup:
    • Slowly and carefully pour the hot sugar syrup into the whipped egg whites in a thin, steady stream. Aim to pour between the whisk and the sides of the bowl to avoid splashing.
    • Once all the syrup is added, increase the mixer speed to medium-high and continue whipping.
  5. Whip to Fluff:
    • The egg whites will deflate initially but will thicken and become glossy as they continue to whip.
    • Whip for 6-8 minutes until the mixture reaches a thick, fluffy consistency.
    • Add the vanilla extract and continue to whip until the fluff has cooled.
  6. Store the Fluff:
    • Pour the marshmallow fluff into an airtight container. It can be stored at room temperature for up to 6 weeks.
