Fried chicken with creamed spinach

Ingredients:

  • 4 boneless, skinless chicken breast fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices chopped bacon
  • 1 cup sliced ​​mushrooms
  • 2 garlic cloves, chopped
  • 2 cups fresh spinach
  • 1 cup cream
  • 1 /2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Additional Parmesan cheese and fresh parsley for garnish

Season chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6 to 8 minutes per side. Remove from pan and set aside.
In the same pan, fry the bacon until crispy.Remove the bacon and set aside, leaving the bacon fat in the pan.
Add the mushrooms to the pan and fry for about 5 minutes until they start to brown. Add the garlic and cook for another minute.Add the spinach and cook until wilted. Reduce heat and add cream, Parmesan cheese and nutmeg.Cook, stirring frequently, until the sauce thickens slightly.
Add the chicken and bacon back to the pan. Pour the spinach and mushroom cream over the chicken. Cook for another 2-3 minutes, making sure the chicken is reheated and everything is well mixed.
Serve hot, garnished with more Parmesan cheese and fresh parsley.Preparation time: 15 minutes Cooking time: 30 minutes Total time: 45 minutes
