Ingredients
- 1 1/2 cups vanilla wafer crumbs
- 4 tablespoons unsalted butter, melted
- 1 package (3 ounces) orange gelatin
- 1 cup boiling water
- 2 packages (8 ounces each) cream cheese, softened
- 1/ 2 cups powdered sugar
- 1 teaspoon vanilla extract
- zest of one orange for garnish (optional)

1. Start by lining a 9-inch springform pan with parchment paper or spraying lightly with nonstick cooking spray.
2. In a medium bowl, stir together vanilla wafer crumbs and melted butter. Press the mixture firmly into the bottom of the pan to form a crust.Let it rest in the fridge while you prepare the filling.
3. Dissolve the orange gelatin in boiling water, stirring well until completely dissolved, and allow to cool to room temperature.
4. In a large bowl, stir together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and well blended.5. Slowly stir in the cooled gelatin until well mixed.
6. Pour the cream cheese and gelatin mixture over the base and smooth the top with a spatula.
7.Let the cheesecake rest in the refrigerator for at least 4 hours or overnight to set completely.
8. Add some flair before serving and sprinkle orange zest on top if you want some color and zing.
