This recipe will guide you through the steps to achieve a beautifully seared crust with a juicy and tender interior.
Ingredients
- 3 ribeye steaks, each about 1 inch thick
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Prepare Steaks: Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels to remove any moisture.
- Season Steaks: Generously season both sides of the steaks with salt and pepper. Press the seasoning into the meat to ensure it adheres well.
- Heat Pan: Preheat a cast-iron skillet over high heat until it is smoking hot. Add the olive oil and swirl to coat the pan.
- Sear Steaks: Place the steaks in the hot skillet, making sure not to overcrowd the pan. Sear the steaks for 2-3 minutes on each side, or until a golden-brown crust forms. Avoid moving the steaks during searing to ensure a perfect crust.
- Add Aromatics: Reduce the heat to medium. Add the butter, smashed garlic, rosemary, and thyme to the pan. Tilt the pan and use a spoon to baste the steaks with the melted butter and aromatics.
- Finish Cooking: Continue to cook the steaks, flipping and basting them with the aromatic butter until they reach your desired level of doneness. For medium-rare, the internal temperature should be about 130°F (54°C).
- Rest Steaks: Remove the steaks from the pan and place them on a cutting board. Cover them loosely with aluminum foil and let them rest for 5-10 minutes to allow the juices to redistribute.
- Serve: Slice the steaks against the grain and serve immediately with your favorite sides.
