Pavê is a beloved Brazilian dessert characterized by its layers of creamy filling and softened cookies or biscuits. Known for its simplicity and rich flavor, it’s a no-bake treat often served at special gatherings and holidays. The name “Pavê” originates from the French word for “paving,” symbolizing the layered look of the dessert.

Ingredients:

  • Cream Layer:
    • 3 large eggs
    • 3/4 cup sugar (180 g)
    • 1/2 cup all-purpose flour (70 g)
    • 2 1/2 cups milk (600 ml)
    • 3/4 cup butter (at room temperature, 180 g)
  • Cookies Layer:
    • 7 oz (200 g) of your favorite cookies (e.g., ladyfingers, galletas Marías)
  • Optional Toppings:
    • Chocolate shavings
    • Grated coconut
    • Fresh fruit slices

Instructions:

  1. Prepare the Cream:
    • Whisk eggs and sugar in a bowl until smooth. Gradually incorporate the flour, ensuring no lumps form.
    • Heat the milk on medium-high and slowly add it to the egg mixture, stirring constantly. Cook until thickened.
    • Let the mixture cool to room temperature. Then, beat the butter until creamy and incorporate the cooled cream, one spoonful at a time, until fully combined.
  2. Layer the Pavê:
    • Dip the cookies briefly in milk (optionally flavored with vanilla or brandy) and arrange a single layer in a 10×6-inch glass dish.
    • Spread a layer of the prepared cream over the cookies.
    • Repeat the layering process until all ingredients are used, finishing with a cream layer.
  3. Chill and Garnish:
    • Refrigerate the Pavê for at least 5 hours to set. Before serving, garnish with optional toppings like chocolate shavings, coconut, or fruit.

Conclusion:

Pavê is a delightful and versatile dessert perfect for any occasion. With its rich cream and cookie layers, it’s an easy way to impress guests or add a sweet touch to your day. Refrigerate any leftovers to enjoy later!
