Ingredients

Base:

  • 175g Amaretti cookies or graham crackers (crushed)
  • 90g unsalted butter (melted)

Filling:

  • 800g cream cheese or ricotta
  • 200ml sour cream
  • 150g sugar
  • 5 medium eggs
  • 50g raisins (soaked in liqueur or water)
  • Zest of 1 lemon
  • 1 sachet vanilla sugar (or 1 tsp vanilla extract)
  • Optional: 200g glace cherries or candied peel

Toppings:

  • Flaked almonds and powdered sugar (optional)

Instructions

  1. Prepare the Base:
    • Preheat the oven to 170°C (325°F).
    • Crush the cookies and mix with melted butter. Press firmly into the base of a springform pan and bake for 10 minutes. Let cool.
  2. Prepare the Filling:
    • Mix the cream cheese, sugar, sour cream, and eggs until smooth.
    • Stir in the lemon zest, vanilla, and soaked raisins (drained). Add cherries or candied peel for added texture.
  3. Assemble and Bake:
    • Pour the filling onto the cooled base. Smooth the surface.
    • Bake at 180°C (356°F) for 45–50 minutes until the edges are set but the center is slightly wobbly.
    • Cool completely, then chill in the fridge for 4 hours.
  4. Serve:
    • Dust with powdered sugar and garnish with almonds if desired. Serve cold or at room temperature.
