Ingredients

  • Cucumbers: 1½ pounds (Persian, Turkish, or English cucumbers, thinly sliced)
  • Salt: ½ teaspoon
  • Scallions: 4–5, finely sliced
  • Ginger: 1 teaspoon, grated
  • Garlic: 1 clove, finely minced
  • Rice Vinegar: ¼ cup
  • Soy Sauce: 1 tablespoon (or gluten-free alternative like coconut aminos)
  • Toasted Sesame Oil: 1 tablespoon
  • Maple Syrup: 1 tablespoon (or honey/sugar, to taste)
  • Chili Garlic Sauce: 1 teaspoon (or Sriracha, optional, for heat)
  • Toasted Sesame Seeds: 1–2 tablespoons

Instructions

  1. Prepare the Cucumbers:
    • Score the cucumbers lengthwise using the tines of a fork to create ridges for the dressing to cling to (optional).
    • Thinly slice the cucumbers and place them in a bowl. Toss with salt and let sit for 20 minutes to release excess water.
  2. Make the Dressing:
    • In a large bowl, combine rice vinegar, soy sauce, sesame oil, maple syrup, grated ginger, minced garlic, and chili garlic sauce (if using).
  3. Assemble the Salad:
    • Strain the salted cucumbers, without rinsing them, to remove excess liquid.
    • Add the cucumbers to the dressing along with scallions and toasted sesame seeds. Toss everything together until well combined.
  4. Adjust and Serve:
    • Taste the salad and adjust the saltiness, sweetness, or spice to your liking.
    • Refrigerate until ready to serve. This salad is best enjoyed on the same day but can be stored for up to 3 days in the refrigerator.

With its tangy, savory, and slightly spicy notes, it’s the perfect companion to grilled meats, stir-fry, or simply as a standalone snack.
