Ingredients
For the Base:

- 3 cups (720ml) heavy cream, divided
- 3 tbsp powdered gelatin (1 tbsp for each layer)
- 9 tbsp water, divided (3 tbsp for each layer)
- 3 tbsp sugar, divided (optional, for extra sweetness)
For Decoration:
- Fresh strawberries, blackberries, blueberries, and raspberries
- Whipped cream
- Fresh mint or edible greenery
Instructions
- Prepare the Cake Base:
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20cm) round cake pan.
- In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, followed by vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until well combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- Prepare the Mousse Layers:
- For each layer, melt the chocolate (dark, milk, and white) in separate bowls using a double boiler or microwave.
- Bloom the gelatin by sprinkling 1 tbsp of gelatin over 3 tbsp of water for each layer. Let it sit for 5 minutes, then gently heat until dissolved.
- Whip 1 cup of heavy cream to soft peaks. Gradually fold the melted chocolate and dissolved gelatin into the whipped cream for each layer.
- Spread the dark chocolate mousse evenly over the cooled cake base. Chill for 20 minutes.
- Repeat with the milk chocolate mousse, spreading evenly over the dark chocolate layer. Chill for another 20 minutes.
- Finally, add the white chocolate mousse layer. Smooth the top and refrigerate for at least 4 hours or overnight.
- Decorate the Cake:
- Pipe whipped cream around the edges and arrange fresh fruits on top. Garnish with mint leaves or greenery for a fresh, elegant touch.
