Almond Cake Bars

Ingredients:

For the Bars:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup sliced almonds

For the Topping:

  • 1/4 cup sliced almonds
  • 2 tablespoons granulated sugar
  • Powdered sugar, for dusting

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Prepare the Batter:
    • In a large bowl, whisk together the melted butter and granulated sugar until smooth.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the almond extract.
  3. Mix Dry Ingredients:
    • In a separate bowl, whisk together the flour and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the 1/2 cup of sliced almonds.
  4. Bake the Bars:
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Sprinkle the top with the remaining 1/4 cup of sliced almonds and 2 tablespoons of granulated sugar.
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  5. Cool and Serve:
    • Let the bars cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
    • Once cooled, dust the top with powdered sugar.
    • Cut into squares and serve.
