I’m honestly not sure what the regional distribution of Shopper’s Food Warehouse is…but that was (and still is) my mom’s grocery store. And the only reason I remember it is because of the donut exhibit. I mean HOLY COLOSSAL DONUTS. No, really, that’s what they were called. For 59 cents you could get a donut in every flavor imaginable that was literally the size of my 10 year old face.No wonder he was a chubby boy.

In addition to the donuts, there was something even bigger. The apple pieces. Oh my god, I’m getting nostalgic and hungry just thinking about her. While the donuts were the size of my 10 year old face, the donuts were the size of my 25 year old face.Crispy on the outside, huge chunks of cinnamon apple nestled in a gooey, doughy center, about an inch thick of icing all over…yeah.

So my apple pieces are not the size of my face. Or “pasty.” Or coated in more sugar than you should consume in an entire year. But they are so delicious that I can’t stand it.Maybe it’s more akin to fried apple pancakes, but there’s something about apples and cinnamon when fried all over to create a crispy, crunchy caramel crust… and drizzled with a little honey that makes me melt.

If you want to be super healthy and sugar free, you can skip the honey entirely and they will be divine on their own or with a tablespoon of almond butter. Mmmmm…almond butter…

Ingredients

  • 2 t honey optional
  • 1/8 t nutmeg
  • 1/4 c linseed flour
  • coconut oil for frying
  • 1/4 c desiccated coconut
  • 1/4 t salt
  • 2 t coconut flour
  • 5 eggs
  • 4 green ones Apples
  • 1 tsp cinnamon

Instructions

Grind the apples with a hand grater; DO NOT attempt to make this in a food processor or you will end up with applesauce. We don’t want applesauce. Pat the grated apples dry with kitchen paper.Combine apples with all other ingredients and mix well.
Heat the coconut oil in a heavy-bottomed frying pan over medium heat. Don’t be afraid to be generous with the oil! We like fat here 🙂
Add the dough to the oil in large spoonfuls. Fry for 2-3 minutes, then turn over and cook for another 2-3 minutes.Watch them closely to make sure they don’t burn. Place them on paper towels to drain excess oil.
Serve hot with honey and/or almond butter!
