This Asian-Style Cabbage Salad is the ultimate refreshing side dish — loaded with shredded cabbage, carrots, vibrant veggies, toasted almonds, and crispy fried noodles, all tossed in a sweet and tangy sesame dressing. It’s perfect for BBQs, potlucks, or light lunches!


Ingredients

For the Salad:

  • 3 cups green cabbage, thinly shredded

  • 1 cup purple cabbage, shredded

  • 1 large carrot, grated

  • ½ cup green onions, sliced

  • ½ cup sliced almonds

  • 2 tablespoons sesame seeds

  • ½ cup crispy fried noodles or wonton strips

  • Optional: shredded broccoli stalk, chopped cilantro

For the Sesame Dressing:

  • ¼ cup rice vinegar

  • 2 tablespoons soy sauce

  • 2 tablespoons honey or maple syrup

  • 1 tablespoon sesame oil

  • 2 tablespoons olive oil or neutral oil

  • 1 teaspoon fresh ginger, grated

  • 1 garlic clove, minced

  • Salt & pepper to taste

Step 1: Prepare the Vegetables

Shred the cabbages, grate the carrot, and thinly slice the green onions. Toss together in a large salad bowl along with almonds and sesame seeds.

Step 2: Make the Dressing

In a small bowl or jar, whisk together the rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, garlic, and a pinch of salt and pepper. Adjust to taste.

Step 3: Assemble the Salad

Pour the dressing over the shredded vegetables. Toss well to coat. Just before serving, top with crispy noodles or fried wonton strips to maintain their crunch.

  • Best served fresh, but you can prep the veggies and dressing separately up to 1 day ahead.
