Avocado and Egg Salad
Ingredients:
- 2 ripe avocados, diced
- 4 hard-boiled eggs, sliced
- 4 cups mixed greens (such as spinach, arugula, and kale)
- 1/4 red onion, thinly sliced
- 2 tablespoons chives, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Dressing:
- 3 tablespoons olive oil
- 1 tablespoon lemon juice (or to taste)
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
Instructions:
- Prepare the Ingredients:
- Dice the avocados and slice the hard-boiled eggs.
- Thinly slice the red onion.
- Chop the chives and parsley.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined.
- Assemble the Salad:
- In a large bowl, add the mixed greens.
- Top with diced avocado, sliced hard-boiled eggs, and thinly sliced red onion.
- Sprinkle chopped chives and parsley over the salad.
- Dress the Salad:
- Drizzle the dressing over the salad and toss gently to combine.
