Savory, smoky, and loaded with flavor, these bacon-wrapped stuffed onions are filled with cheesy ground meat, wrapped in crispy bacon, and baked to perfection. Perfect as a hearty appetizer, side dish, or main course.
Ingredients

4 large sweet onions (Vidalia or yellow)

1 lb ground beef or sausage

1/2 cup shredded cheddar or mozzarella cheese

1/4 cup breadcrumbs (or almond flour for keto)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt & pepper to taste

8–12 strips thick-cut bacon

1/4 cup barbecue sauce (optional, for glaze)
Instructions

Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.

Prepare onions by cutting off the tops, peeling, and hollowing out the centers.

Cook the filling: Brown the ground meat in a skillet. Add spices, cheese, and breadcrumbs. Stir to combine.

Stuff each onion with the meat mixture.

Wrap each onion with 2–3 strips of bacon. Secure with toothpicks if necessary.

Place in baking dish and bake for 40–50 minutes until bacon is crispy and filling is bubbly.

In the final 10 minutes, brush with BBQ sauce if desired.

Let cool slightly before serving.

Use a melon baller to easily hollow out onions.

For grilling, cook over indirect heat for 30–40 minutes.
