Baked Chicken with Zucchini and Cherry Tomatoes
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 medium zucchinis, sliced
- 1 pint cherry tomatoes, halved
- 1 red onion, sliced
- 1/4 cup chicken broth or white wine
- Fresh parsley, chopped for garnish
Instructions
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Chicken:
- In a large bowl, coat the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the seasoned chicken in a baking dish.
- Add Vegetables:
- Arrange the sliced zucchini, cherry tomatoes, and red onion around the chicken in the baking dish.
- Pour the chicken broth or white wine over the vegetables to add moisture and flavor.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
- Garnish and Serve:
- Remove from the oven and let it rest for a few minutes.
- Garnish with chopped fresh parsley before serving.
