– 1 fish fillet (such as cod, halibut, or salmon)
– 1 teaspoon fish seasoning
– two cups cherry tomatoes, halved
– 1/4 cup olives, pitted
– three garlic cloves, minced
– two sprigs clean parsley, chopped
– two sprigs clean thyme
– half teaspoon chili flakes
– 1 teaspoon Cajun seasoning
– 1 teaspoon Italian seasoning
– 1 teaspoon paprika
– half teaspoon salt
– half teaspoon black pepper
– three tablespoons cooking oil
– three tablespoons salted butter
– two tablespoons water
INSTRUCTIONS
1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking oil or line it with parchment paper.
2. Season each aspects of the fish fillet with fish seasoning, salt, and black pepper. Set aside.
3. In a mixing bowl, mix the halved cherry tomatoes, pitted olives, minced garlic, chopped parsley, sparkling thyme sprigs, chili flakes, Cajun seasoning, Italian seasoning, paprika, salt, and black pepper. Toss to coat the tomatoes and olives evenly with the seasonings.
4. Place the pro cherry tomatoes and olives in the organized baking dish, spreading them out evenly.
5. Lay the pro fish fillet on pinnacle of the cherry tomatoes and olives in the baking dish.
6. Dot the pinnacle of the fish fillet with portions of salted butter.
7. Pour two tablespoons of water into the baking dish round the fish fillet. This helps to create steam and maintain the fish moist whilst baking.
8. Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or till the fish is cooked via and flakes without difficulty with a fork.
9. Remove the foil from the baking dish and change the oven to broil. Broil the fish for an extra 2-3 minutes, or till the pinnacle is gently golden and caramelized.
10. Remove the baked fish with cherry tomatoes and olives from the oven. Garnish with extra clean parsley, if desired.
11. Serve the baked fish warm with the roasted cherry tomatoes and olives alongside. Enjoy your flavorful and nutritious meal!
