If you’ve ever tried making baklava at home, you know what a process it is. Layers of tender filo dough, lots of butter spread and a homemade nut filling – this is not for the faint of heart. If you’re craving the sweet, nutty flavor but aren’t ready to commit to the real thing, this baklava bundt cake recipe is perfect!

This recipe does require a few different steps, but don’t be intimidated, they’re all easy! First, mix up a simple pistachio and walnut filling.This extends along the bottom of the mold so that it lies on top when turned over. The next step is the cake batter. We went the easy route with boxed white cake mix, but replaced the oil with butter and the water with milk. This gives the cake a deliciously rich texture.

WALNUT TOPPING

  • ¼ cup butter
  • ½ cup chopped pistachios
  • ½ cup chopped walnuts
  • ¼ cup brown sugar
  • 2 tablespoons corn syrup
  • pinch of cinnamon

CAKE

  • 1 (14.25 oz) white cake mix
  • 3 eggs
  • ½ cup melted butter
  • 1 cup buttermilk

HONEY SAUCE

  • ¾ cup sugar
  • 2 teaspoons lemon juice
  • 1 tablespoon water
  • 1/3 cup honey

DIRECTIONS

Preheat oven to 325 degrees A standard pan Grease well and set aside.
Topping: Place all topping ingredients in a small pot. Cook over medium heat for 2-3 minutes or until butter is completely melted and sugar is dissolved. Pour the mixture into the prepared pan and spread it evenly over the bottom. Cake : In a large bowl, combine all the ingredients for the cake batter and stir until smooth.Gently pour the batter over the nut mixture, then bake for 38-42 minutes or until a toothpick comes out clean.
Sauce: Start making the sauce while the cake is baking. In a small saucepan, combine sugar, lemon juice and water and cook over medium heat for 4-5 minutes. Add honey and cook for 1 minute more. Set the sauce aside to cool and thicken.Allow the cake to cool for about 12 minutes, then turn it out onto your desired serving plate. Drizzle the cooled sauce over it.
