Ingredients
-
1 refrigerated pizza dough (or homemade)
-
1 ½ cups cooked shredded chicken
-
½ cup BBQ sauce (plus more for dipping)
-
1 ½ cups shredded mozzarella cheese
-
½ cup shredded cheddar cheese
-
¼ cup red onion, thinly sliced (optional)
-
1 tablespoon chopped fresh cilantro (optional)
-
1 egg, beaten (for egg wash)
-
1 tablespoon olive oil
-
½ teaspoon garlic powder
-
½ teaspoon smoked paprika
-
Salt and pepper, to taste
Instructions
-
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
-
Prepare the chicken filling:
In a medium bowl, mix shredded chicken with BBQ sauce, garlic powder, smoked paprika, and a pinch of salt and pepper. Add in the sliced red onions if using. -
Roll out the dough:
On a lightly floured surface, roll the pizza dough into a rectangle (about 10×14 inches). -
Layer the filling:
Spoon the BBQ chicken mixture evenly down the center of the dough, leaving a 2-inch border around the edges. Top with mozzarella and cheddar cheese. Sprinkle with chopped cilantro if using. -
Fold and seal:
Fold the sides of the dough over the filling, then roll the dough tightly from one long edge to the other, like a jelly roll. Pinch the seam and tuck the ends underneath to seal. -
Transfer to baking sheet:
Place the stromboli seam-side down on the prepared baking sheet. Brush the top with the beaten egg. -
Score and bake:
Using a sharp knife, make 4–5 small diagonal slits on top for venting. Bake for 20–25 minutes, or until golden brown and cooked through. -
Cool and slice:
Let the stromboli cool for 5 minutes before slicing. Serve warm with extra BBQ sauce or ranch dressing for dipping.
Notes
-
Make it spicy: Add sliced jalapeños or a dash of hot sauce to the BBQ chicken mixture.
-
Cheese options: Feel free to substitute or add Monterey Jack, pepper jack, or gouda for extra flavor.
-
Leftovers: Store slices in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
-
Freezer-friendly: Assemble and freeze unbaked stromboli. Bake directly from frozen at 375°F (190°C) for about 35–40 minutes.
