Ingredients

  • 1 refrigerated pizza dough (or homemade)

  • 1 ½ cups cooked shredded chicken

  • ½ cup BBQ sauce (plus more for dipping)

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • ¼ cup red onion, thinly sliced (optional)

  • 1 tablespoon chopped fresh cilantro (optional)

  • 1 egg, beaten (for egg wash)

  • 1 tablespoon olive oil

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and pepper, to taste


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

  • Prepare the chicken filling:
    In a medium bowl, mix shredded chicken with BBQ sauce, garlic powder, smoked paprika, and a pinch of salt and pepper. Add in the sliced red onions if using.

  • Roll out the dough:
    On a lightly floured surface, roll the pizza dough into a rectangle (about 10×14 inches).

  • Layer the filling:
    Spoon the BBQ chicken mixture evenly down the center of the dough, leaving a 2-inch border around the edges. Top with mozzarella and cheddar cheese. Sprinkle with chopped cilantro if using.

  • Fold and seal:
    Fold the sides of the dough over the filling, then roll the dough tightly from one long edge to the other, like a jelly roll. Pinch the seam and tuck the ends underneath to seal.

  • Transfer to baking sheet:
    Place the stromboli seam-side down on the prepared baking sheet. Brush the top with the beaten egg.

  • Score and bake:
    Using a sharp knife, make 4–5 small diagonal slits on top for venting. Bake for 20–25 minutes, or until golden brown and cooked through.

  • Cool and slice:
    Let the stromboli cool for 5 minutes before slicing. Serve warm with extra BBQ sauce or ranch dressing for dipping.
