Beef Lombardi
Ingredients:
- 1 pound ground beef
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt and pepper to taste
- 8 ounces egg noodles, cooked according to package directions
- 1 cup sour cream
- 1 cup grated cheddar cheese
- 1 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese

1. Preheat your oven to 350°F (175°C). Grease a 9 x 13 inch baking dish.
1.In a large skillet, brown the ground beef over medium heat until browned. Add the chopped onion and minced garlic and cook until the onion is translucent.
1. Add the diced tomatoes (with their juice), tomato sauce, dried oregano, dried basil, salt and pepper. Let the mixture simmer for about 10 minutes, stirring occasionally to allow the flavors to blend.1. Layer half of the cooked egg noodles on the bottom of the prepared baking dish. Spread half of the meat mixture over the noodles.
1. Pour half of the sour cream over the meat mixture and then sprinkle half of the cheddar and mozzarella cheeses on top.1. Repeat layers with remaining pasta, meat mixture, sour cream, and cheese.
1. Sprinkle the grated Parmesan cheese evenly over the casserole.
1.Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
1. Remove foil and bake for another 10 minutes, or until cheese is melted and bubbly.
