Ingredients

Serves 4–6

For the Soup

  • 1–1.5 lb beef chuck roast, cut into bite-sized cubes

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2–3 carrots, sliced

  • 2 celery stalks, sliced

  • 2–3 cups mushrooms, sliced

  • 3–4 garlic cloves, minced

  • 8 cups beef broth

  • 2 bay leaves

  • 1 tsp dried thyme (or 1 tbsp fresh)

  • 1 tsp dried parsley

  • Salt and pepper to taste

For the Noodles

  • 2 cups wide egg noodles

Optional Garnish

  • Fresh parsley, chopped

Instructions

  1. Sear the Beef
Heat olive oil in a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove beef and set aside.

  2. Sauté the Vegetables
In the same pot, add onion, carrots, celery, and mushrooms. Cook for 5–6 minutes until softened. Add garlic and cook for 1 more minute.

  3. Add Broth and Seasonings
Return the seared beef to the pot. Pour in the beef broth and add bay leaves, thyme, parsley, salt, and pepper.

  4. Simmer the Soup
Bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1½ hours, or until the beef becomes tender.

  5. Cook the Noodles
Add the egg noodles directly to the pot. Cook uncovered for 8–10 minutes, or until noodles are soft. Adjust seasoning if needed.

  6. Finish and Serve
Remove bay leaves. Ladle into bowls and garnish with fresh parsley.

Conclusion

This Beef Noodle Soup is simple to make yet incredibly flavorful, thanks to slow-simmered beef, fresh vegetables, and hearty egg noodles. It’s perfect for meal prep, family dinners, or warming up on a cold day. Serve it on its own or with crusty bread for a complete comfort-food experience.
