BEST EVER BEEF AND BARLEY SOUP
This is the perfect soup for a cold winter day. It will fill you up, it’s full of incredible flavor! Kids will love it too!
This soup is fantastic! Simply delicious and also very healthy!I love barley soup and so do children. I like to make a big batch and freeze some. It’s always good to have some soup in the freezer in case someone gets sick.
It can also be made in a crock pot or slow cooker. After browning the meat, add all the ingredients to the Dutch oven.Simmer for 4 to 6 hours or until the carrots are tender.
Best Ever Beef and Barley Soup
Servings 10 Servings
Cooking Time 40 minutes
INGREDIENTS:
- 1 pound boneless roast beef, trimmed and cut into 1/2-inch pieces
- 1 1/2 cups in thinly sliced carrots
- 1 1/2 cups thinly sliced celery
- 2/3 cup chopped onions
- 1 package pre-sliced mushrooms 8 ounces
- 2 tablespoons beef base (This is different from beef stock is a base for beef stock)
- 8-10 cups water
- 1 large bay leaf
INSTRUCTIONS:
1. Brown the meat in a non-stick pan, stirring frequently.
2. Remove the meat from the pan and place it in the pot. Add carrot, celery, onion and mushrooms, meat base, water, garlic and bay leaf.3. Cook over high heat for an hour, add the pearl barley, then reduce the heat and cook until the vegetables and meat are tender. Add salt and pepper.
4. Discard the bay leaf.
