INGREDIENTS
- 4 boneless chicken breasts, cooked and chopped/shredded
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- salt to taste
- pepper to taste
- 1/2 cup to 1 cup. Dried cranberries
Dressing:
- 1 cup mayonnaise
- 1/2 cup sugar
- 1/4 cup vinegar
- 1 tsp. prepared mustard
- 1 tbsp.Salt to taste
- 1/4 tsp. pepper
INSTRUCTIONS
Stir in the cooked chicken, onions and celery, and salt and pepper. Mix all the ingredients for the sauce and pour over the chicken. Add the dried cranberries (add just before serving, otherwise the chicken salad will turn pink). Serve with crackers or over salad.
Note: If the chicken salad is too dry, add more dressing.White meat tends to soak up the sauce.
