Best Strawberry Poke Cake
1 box white cake mix (plus ingredients to make mix)
Commonly ordered cake mix ingredients:
- 3 egg whites
- 1 cup water
- 1/3 cup vegetable oil
Strawberry and white chocolate mix:
- 14 oz sweetened condensed milk
- 3/4 cups white chocolate chips
- 1 package (3 ounces strawberry JELL-O gelatin)
- 1/4 cup warm water
- 2 cans (21 ounces each strawberry pie filling)
- 2 cups heavy whipping cream (full fat and cold)
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 10-15 fresh strawberries (sliced)
Prepare the white cake:
Preheat oven to 350°F.
Grease and flour a 9 x 13 inch cake pan.
Prepare the white cake mix according to package directions. Pour the batter into the prepared pan and bake for about 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes and use a wooden spoon to poke holes all over the cake.Strawberry and White Chocolate Mixture:
In a medium microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk. Microwave for about 1 minute, stirring and heating for 30 seconds or longer if necessary. Stir until well blended, smooth and glossy.
Add the strawberry-gelatin mixture to the warm water. Make sure it dissolves otherwise it will be grainy.Add the strawberry mixture to the evaporated milk mixture until fully combined and smooth.
Pour the strawberry-chocolate mixture all over the cake and use a spatula to spread it evenly into the holes.
Allow the cake to cool completely and place it in the fridge for about an hour.
Cover cake with strawberry shortcake filling, if using.
Beat heavy cream, sugar, and vanilla extract in a large bowl until stiff peaks form.Use a spoon to spread the whipped cream all over the cake and spread it with a spatula.
Garnish the cake with sliced strawberries.
Before serving, place the cake in the refrigerator for at least 8 hours, or preferably overnight.
