Birria Tacos Recipe
Ingredients:
For the Birria:
- 2 pounds beef chuck roast, cut into large chunks
- 1 pound beef short ribs
- 2 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 2 dried pasilla chiles, stemmed and seeded
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 2 bay leaves
- 4 cups beef broth
- 1/4 cup apple cider vinegar
- Salt and black pepper, to taste
For the Tacos:
- Corn tortillas
- 2 cups shredded mozzarella cheese (or Mexican cheese blend)
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions:
- Prepare the Birria:
- Preheat your oven to 325°F (163°C).
- In a dry skillet over medium heat, toast the dried chiles until fragrant, about 1-2 minutes per side. Transfer to a bowl and cover with hot water. Let soak for 20 minutes until softened.
- In a blender, combine the softened chiles, chopped onion, minced garlic, oregano, cumin, cinnamon, and apple cider vinegar. Blend until smooth.
- Season the beef chunks and short ribs with salt and black pepper. In a large oven-safe pot or Dutch oven, heat some oil over medium-high heat. Brown the beef in batches, then remove and set aside.
- In the same pot, pour in the blended chile mixture and cook for 5-7 minutes, stirring occasionally. Add the beef broth, bay leaves, and browned beef. Bring to a simmer, then cover and transfer to the preheated oven. Cook for about 2.5 to 3 hours, or until the meat is tender and easily shredded.
- Shred the Meat:
- Remove the beef from the pot and shred it using two forks. Return the shredded meat to the pot and mix with the sauce.
- Assemble the Tacos:
- Heat a skillet or griddle over medium heat. Dip the corn tortillas into the birria sauce to coat, then place them on the hot skillet.
- Sprinkle a layer of shredded cheese on one half of each tortilla. Add a generous amount of shredded birria meat on top of the cheese. Fold the tortillas in half to form tacos.
- Cook the tacos until crispy and the cheese is melted, about 2-3 minutes per side.
- Serve:
- Serve the birria tacos hot, garnished with chopped fresh cilantro and a squeeze of lime juice. Enjoy with a side of the birria broth for dipping.
