Ingredients

  • 3 cups mixed salad greens

  • 1 ripe peach, thinly sliced

  • 1 cup fresh blueberries

  • ½ cup crumbled feta cheese

  • ¼ cup chopped pecans

For the Dressing:

  • ¼ cup balsamic vinegar

  • ½ cup olive oil

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • Salt and pepper, to taste

Directions

  1. Prepare the salad base:
    In a large bowl, combine the salad greens, sliced peach, blueberries, feta cheese, and chopped pecans.

  2. Make the dressing:
    In a separate small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until smooth and emulsified.
