BREAKFAST PIZZA

Ingredients

  • homemade or store-bought pizza dough
  • 2 tablespoons olive oil
  • 8 large eggs
  • kosher salt
  • freshly ground black pepper
  • 2 tablespoons cold water
  • 1 1/2 tablespoons butter
  • 1 1/4 cups grated provolone cheese
  • 1 cup grated Pepper Jack cheese
  • 6 slices coarsely chopped crispy cooked bacon
  • 1/2 pounds browned pork breakfast sausage
  • 1/2 red peppers, finely chopped
  • 3 chopped green onions
  • optional sauce

Preheat oven to 425 degrees. Grease a 10 x 15 inch baking sheet.
Spread the pizza dough around the baking tray and press it down lightly with your fingers and hands. It may take a little longer for the pizza dough to work as it tends to pull away from the edges.Once the dough appears to be standing still, use your hands to scoop out some of the dough and press it against the side of the baking sheet to form a crust. Bake in the oven for 7-8 minutes. Whisk together
eggs and water. Melt butter in a large nonstick skillet over medium heat. Add the egg mixture and cook slowly, turning carefully with a spatula.Be sure to lightly cook the eggs when re-cooking them in the oven. Season the eggs with kosher salt and freshly ground black pepper. Place the eggs on the pizza dough. Top
eggs with both cheeses, cooked bacon, boiled sausage, red pepper and spring onions.
Place back in the oven for 10-12 minutes and turn on the grill for the last 1-2 minutes. Rotate the baking sheet several times during the grilling process and stay close as I have always found the grill to be a bit unpredictable.

Notes

Many grocery stores and bakeries sell ready-made pizza dough. If your time is limited, and mine is often limited, then this is a true blessing. You can also use refrigerated canned pizza dough.
Feel free to cook the bacon and sausage in advance and store them in an airtight container in the refrigerator until ready.
Undercook scrambled eggs by cooking them over low heat and turning off the heat early.The idea is that they are firm enough to hold the pizza dough.
You can use any good cheese to melt pizza, such as Mozzarella, Cheddar, Provolone, Gouda and Baby Swiss. Have fun and mix it with any cheese you like.
The pizza can be customized with different vegetables such as mushrooms, zucchini, jalapenos or potatoes.
For variety, add a layer of white sauce directly underneath the eggs, as you would pizza sauce.The grill adds a nice touch that sometimes doesn’t come from normal oven temperatures. However, grilling can be very unpredictable, so stay close and rotate the baking sheet several times.
Store leftovers in a storage bag in the refrigerator for up to 3 days or in a frozen freezer bag for up to 2 months. Reheat in microwave at 50% power for 1-1 1/2 minutes or until warm.
