  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon taco seasoning (or mix of chili powder, cumin, paprika)

  • Salt and black pepper, to taste

  • ½ cup tomato sauce or salsa

  • 1½ cups shredded cheddar or Mexican blend cheese

  • 6 large flour tortillas

  • 2 tablespoons olive oil or melted butter (for brushing)

  • Optional: chopped cilantro or parsley for garnish


Instructions

  1. Cook the Beef Filling
    In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat. Add garlic, taco seasoning, salt, and pepper. Stir in tomato sauce or salsa. Simmer for 5–7 minutes. Remove from heat and stir in ½ cup cheese.

  2. Assemble Pockets
    Lay a tortilla flat. Spoon beef mixture into the center. Top with extra shredded cheese. Fold in all sides to form a square or rectangular pocket. Place seam-side down in a greased baking dish.

  3. Bake
    Brush the tops with olive oil or melted butter. Bake at 375°F (190°C) for 18–22 minutes, or until golden and crispy.

  4. Serve
    Garnish with fresh herbs if desired. Serve warm with sour cream, salsa, or guacamole.

  • Cheese options: Swap in pepper jack, mozzarella, or Monterey Jack.
