Cheesy Beef Tortellini Bake

Ingredients:

  • 1 pound beef stew meat or steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1/2 cup beef broth
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 1 package (20 oz) cheese tortellini, fresh or frozen
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions:

  1. Cook the Beef:
    • In a large skillet, heat the olive oil over medium-high heat. Add the beef pieces and cook until browned on all sides. Remove the beef from the skillet and set aside.
  2. Prepare the Sauce:
    • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the marinara sauce and beef broth. Add the dried Italian seasoning, salt, and black pepper. Stir to combine.
  3. Cook the Tortellini:
    • Cook the cheese tortellini according to the package instructions. Drain and set aside.
  4. Assemble the Dish:
    • Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked beef, tortellini, and sauce. Mix well to ensure everything is coated with the sauce.
  5. Bake:
    • Transfer the mixture to a greased baking dish. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
