Cheesy Cauliflower Casserole
Ingredients:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons melted butter
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
- Cook Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes, until tender but still firm. Drain and set aside.
- Prepare Cheese Sauce:
- In a medium saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1 minute, until bubbly and lightly golden.
- Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens, about 3-5 minutes.
- Remove from heat and stir in the shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
- Combine and Assemble:
- In a large mixing bowl, combine the cooked cauliflower and cheese sauce. Stir until the cauliflower is evenly coated.
- Transfer the mixture to the prepared baking dish.
- Prepare Topping:
- In a small bowl, mix the breadcrumbs with the melted butter until well combined.
- Sprinkle the breadcrumb mixture evenly over the cauliflower casserole.
- Bake: Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the casserole is bubbly.
- Garnish and Serve: If desired, sprinkle with chopped fresh parsley before serving.
