CHEESY PIEROGI CASSEROLE

Ingredients

  • 2 pounds frozen cheddar cheese pierogies
  • 1 15-ounce jar Alfredo sauce
  • 8 pieces chopped, crispy cooked bacon
  • 2 scallions, finely chopped
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar cheese
  • Kosher salt and black pepper to taste
  • 1 teaspoon chopped fresh parsley

Instructions

Preheat oven to 375 degrees. Grease a 9 x 13 inch baking dish (or baking dish of the same size).
Place half of the frozen pierogies in the baking dish. Pour half of the Alfredo sauce over it. Sprinkle with half the chopped crispy bacon, half the chopped green onions and half the cheese. Place the remaining pierogies on top and pour the remaining Alfredo sauce over them.Sprinkle with remaining chopped bacon, green onions, and remaining cheese. Season with kosher salt and black pepper.
Cover with aluminum foil and bake for 15 minutes. Remove the foil and continue baking for another 20-25 minutes or until the cheese is melted and the casserole is bubbly and cooked through. Garnish with fresh chopped parsley.

Notes

Frozen pierogies are available in the freezer section of most grocery stores.
To make cleaning easier, grease the baking dish.
It is not necessary to pre-cook pierogi. They cook well in layers with sauce and cheese.
You can use any combination of melting cream cheese.I think the combination of mozzarella and cheddar cheese tastes better with alfredo sauce.
Replace the bacon with browned Italian sausage.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
The recipe can be warmed up well in the microwave at reduced power.
