Cheesy Potato and Sausage Bake

Ingredients:

  • 4 cups potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the potatoes: In a large pot, boil the diced potatoes until just tender, about 8 minutes. Drain well.
  3. Cook the sausage and onions: In a skillet over medium heat, cook the sliced sausage and chopped onion until the sausage is browned and onions are tender.
  4. Combine ingredients: In a large mixing bowl, combine cooked potatoes, sausage, onions, garlic powder, paprika, salt, and pepper.
  5. Prepare the cheese sauce: In a saucepan, melt butter over medium heat. Stir in milk and heavy cream, bringing to a low simmer. Remove from heat and stir in the cheddar and mozzarella cheese until melted and smooth.
  6. Mix everything together: Pour the cheese sauce over the potato and sausage mixture, stirring to coat evenly.
  7. Bake: Transfer the mixture to a greased baking dish. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
  8. Garnish and serve: Sprinkle with chopped parsley before serving, if desired.
