Ingredients:
- 2 sheets puff pastry, thawed
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions:
- Prepare the Filling:
- In a medium bowl, combine the chopped spinach, ricotta cheese, shredded mozzarella, grated Parmesan, garlic powder, onion powder, salt, and pepper.
- Mix until all ingredients are well incorporated.
- Prepare the Pastry:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheets on a lightly floured surface to smooth out any creases.
- Assemble the Pastry Squares:
- Cut each puff pastry sheet into equal squares, about 3 inches on each side.
- Place a spoonful of the spinach and cheese mixture in the center of half of the squares.
- Brush the edges of these squares with beaten egg.
- Seal the Pastry:
- Place the remaining squares over the filling-topped squares, pressing the edges to seal.
- Use a fork to crimp the edges and ensure they are sealed well.
- Bake the Pastry Squares:
- Place the sealed pastry squares on the prepared baking sheet.
- Brush the tops with the remaining beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
- Serve:
- Allow the pastries to cool slightly before serving.
- Serve warm as an appetizer, snack, or side dish.
Tips:
- You can add other fillings like cooked mushrooms, ham, or artichokes for variation.
- These pastries can be made ahead of time and reheated in the oven before serving.
