Cheesy Taco Pie Recipe
Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can refried beans
- 1 can diced tomatoes with green chilies, drained
- 1 cup corn kernels (fresh, canned, or frozen)
- 2 cups shredded cheddar cheese
- 6 large flour tortillas
- 1 cup sour cream
- 1 cup shredded lettuce (optional)
- 1 cup diced tomatoes (optional)
- 1/2 cup sliced black olives (optional)
- Cooking spray
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a springform pan with cooking spray.
- Cook Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the taco seasoning and water according to the package instructions. Stir in the refried beans and diced tomatoes with green chilies. Cook for an additional 5 minutes, stirring occasionally.
- Layering: Place one tortilla in the bottom of the springform pan. Spread a layer of the beef mixture over the tortilla, then sprinkle with corn and cheese. Repeat the layering process with the remaining tortillas, beef mixture, corn, and cheese, ending with a layer of cheese on top.
- Bake: Cover the pan with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Let the taco pie cool for a few minutes before removing it from the springform pan. Top with sour cream and optional toppings like shredded lettuce, diced tomatoes, and black olives.
- Slice and Enjoy: Slice the taco pie into wedges and serve warm. Enjoy this cheesy, flavorful dish with a side of your favorite salsa or guacamole.
