HOW TO MAKE CHICKEN ALFREDO
We start by brushing some olive oil on the chicken breasts. Then sprinkle with salt, freshly ground black pepper and Italian seasoning. Heat some oil in a large skillet or skillet over medium-high heat.Fry the chicken until golden brown on both sides and cook through. Remove from the pan, place on a cutting board, cover with aluminum foil and let rest.
Melt butter in a large skillet or saucepan over medium-low heat. Then add the garlic and cook, stirring, for 1 minute. Then add cream, salt, freshly ground black pepper and Italian seasoning.Simmer until slightly thickened but not boiling. Reduce the heat to as low as possible and stir in the Parmesan cheese until melted.

Meanwhile, bring a large pot of salted water to a boil over medium-high heat. Add the fettuccini noodles, cook according to package instructions until al dente and drain well. Add the cooked pasta to the Alfredo sauce and stir to combine.Cut the chicken into thin slices and add to the noodles. Season with more salt and freshly ground black pepper. Garnish with freshly grated Parmesan and freshly chopped parsley if desired.

RECIPE TIPS FOR THE BEST CHICKEN ALFREDO
Using a meat mallet, pound the chicken breast to an even thickness. This ensures the chicken breasts are cooked evenly. For optimal flavor and texture, cook the pasta al dente according to package directions. This means slightly firm with a bit of bite.
Do not overcook the chicken. The chicken is done when the internal temperature reaches 165 degrees on an instant-read meat thermometer.
Carp the chicken and let it rest. This distributes the juice more evenly so that not all of the moisture escapes when cutting.
Reserve about 1/2 cup of pasta water. Use in 1 to 2 tablespoon portions as needed to thin the pasta sauce.
Warm the cream to room temperature by placing it in a microwave-safe measuring cup and heating at 50% power in 30-second intervals until lukewarm.
