Ingredients:
-
3 cups cooked, shredded chicken
-
1 packet ranch seasoning mix
-
1 can (10.5 oz) cream of chicken soup
-
16 oz sour cream
-
2 cups shredded cheddar cheese
-
1/2 cup cooked bacon, chopped
-
1 bag (about 32 oz) frozen tater tots
-
Salt and black pepper to taste
-
Optional: sliced green onions for garnish
Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
2. Mix the Base:
In a large mixing bowl, combine shredded chicken, ranch seasoning, cream of chicken soup, sour cream, and 1½ cups of shredded cheddar. Stir until well mixed. Season with salt and pepper if desired.
3. Layer the Casserole:
Spread the chicken mixture evenly in the baking dish. Top with a single layer of frozen tater tots.
4. Bake:
Bake uncovered for 40–45 minutes, or until the tater tots are golden brown and crispy.
5. Top and Finish:
Remove from oven and sprinkle the remaining ½ cup cheddar cheese and crumbled bacon over the top. Return to oven and bake for an additional 5–7 minutes, until the cheese is melted.
6. Serve:
Let it rest for a few minutes, then garnish with chopped green onions and serve hot!
Tips for Success:
-
Use rotisserie chicken to save time.
-
For extra crunch, broil the top for 1–2 minutes at the end.
-
