This Chicken Caesar Pasta Salad is packed with croutons, parmesan cheese, lettuce, tomatoes, pasta, and chicken; all topped with a creamy Caesar dressing. Serve this cold pasta salad as a side dish at your next BBQ or as an easy weeknight dinner!
Crispy romaine lettuce, store-bought rotisserie chicken (time saver of the century!), crispy croutons, shaved parmesan cheese and rotini pasta, all dressed with a creamy homemade Caesar salad dressing.
The anchovy paste is completely optional, but gives this Caesar its signature flavor.But the real secret to the best homemade Caesar salad is adding grated Parmesan cheese directly to the dressing.
I love dicing up a store-bought rotisserie chicken to make a complete meal, but you can also simply omit the bird to make this the best salad for potlucks, weeknight potlucks, or weekend parties .
Chicken Caesar Pasta Salad Recipe
INGREDIENTS
- 2 stalks of romaine lettuce
- 1 cup shredded or diced cooked chicken
- 1/2 cup grated Parmesan
- 1 cup raw rotini or favorite pasta (see blog post)
- 1 cup croutons
- 1 cup Caesar dressing
- black pepper optional
INSTRUCTIONS
Cook pasta according to package instructions, drain, pour cold water over it and drain again. Put aside.
Cut the romaine lettuce into small pieces and remove the stalk.
In a large bowl, add the lettuce, cold pasta, cooked chicken, parmesan cheese, croutons, dressing and finally black pepper if desired.
Spread the salad with Caesar dressing.Serve immediately to prevent the salad from becoming soggy.
