Chicken Parmesan Pasta Dinner

  • Author: kecha100

Description

This easy Chicken Parmesan Pasta recipe delivers all the flavors of traditional chicken parm—crispy chicken, savory marinara, and gooey cheese—combined into a one-pot pasta dinner. It’s fast, comforting, and perfect for weeknights or cozy weekends!

Ingredients

Scale
  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • Salt and black pepper, to taste

  • 1 (24 oz) jar marinara sauce

  • 2 cups chicken broth

  • 1/2 cup water

  • 12 oz penne or rotini pasta, uncooked

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • Optional: fresh basil, red pepper flakes, breadcrumbs for topping

Instructions

  1. Cook the Chicken:
In a large skillet or Dutch oven, heat olive oil over medium-high. Season chicken with salt, pepper, garlic powder, and Italian seasoning. Cook for 5–6 minutes until browned.

  2. Add Pasta & Sauce:
Pour in marinara sauce, chicken broth, and water. Stir in the uncooked pasta, making sure it’s mostly submerged.

  3. Simmer:
Bring to a boil, then reduce heat. Cover and simmer for 13–15 minutes, stirring occasionally, until pasta is tender and sauce is thickened.

  4. Add Cheese:
Stir in half the mozzarella and parmesan. Sprinkle the remaining cheese over the top, cover, and let it melt for 2–3 minutes.

  5. Serve:
Garnish with chopped basil or toasted breadcrumbs. Serve hot!

Notes

  • Crispy Topping: For added texture, sprinkle seasoned breadcrumbs over the top and broil until golden.

  • Make It Creamy: Add 2 oz of cream cheese with the marinara for a creamy twist.

  • Meal Prep: This pasta reheats well and can be portioned out for lunches.

  • Freezer-Friendly: Store in airtight containers and freeze for up to 2 months.
