Chicken Salad Croissant Sandwich
Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt or sour cream
- 1/2 cup celery, diced
- 1/2 cup red grapes, halved
- 1/4 cup sliced almonds
- 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- Salt and black pepper to taste
- 4 croissants, sliced open
- Lettuce leaves (optional)
Instructions:
- Prepare the Chicken Salad: In a large bowl, combine the shredded or diced cooked chicken, mayonnaise, Greek yogurt or sour cream, diced celery, halved grapes, sliced almonds, and chopped dill.
- Add Lemon Juice and Seasoning: Add the lemon juice, then season with salt and black pepper to taste. Mix well until all ingredients are evenly coated.
- Assemble the Sandwiches: Open each croissant and place a lettuce leaf inside if using. Spoon a generous amount of chicken salad onto the bottom half of each croissant.
- Serve: Close the croissant over the chicken salad and serve immediately.
