Ingredients:

  • 4 boneless, skinless chicken breasts

  • Salt and pepper to taste
  • Vegetable oil (for frying)

Instructions:

  1. Prepare the chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken breasts to an even thickness, about 1/4 inch thick.
  2. Season the flour: In a shallow dish, combine the flour with garlic powder, onion powder, salt, and pepper.
  3. Beat the eggs: In another shallow dish, beat the eggs until smooth.
  4. Prepare the breadcrumbs: Place the breadcrumbs in a third shallow dish.
  5. Bread the chicken: Dredge each chicken breast in the seasoned flour, shaking off any excess. Dip it into the beaten eggs, and then coat it thoroughly with breadcrumbs, pressing gently to adhere.
  6. Heat the oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering.
  7. Fry the schnitzels: Working in batches if necessary, fry the breaded chicken breasts for 3-4 minutes per side, or until golden brown and cooked through. Be careful not to overcrowd the pan.
  8. Drain and serve: Transfer the cooked schnitzels to a paper towel-lined plate to drain any excess oil. Serve immediately with lemon wedges and optional parsley garnish.
