Instructions:

- Heat the oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering.
- Fry the schnitzels: Working in batches if necessary, fry the breaded chicken breasts for 3-4 minutes per side, or until golden brown and cooked through. Be careful not to overcrowd the pan.
- Drain and serve: Transfer the cooked schnitzels to a paper towel-lined plate to drain any excess oil. Serve immediately with lemon wedges and optional parsley garnish.
