Chocolate Pecan Delight

Ingredients:

  • Crust:
    • 1 cup all-purpose flour
    • 1/2 cup unsalted butter, softened
    • 1 cup finely chopped pecans
  • Cream Cheese Layer:
    • 1 package (8 oz) cream cheese, softened
    • 1 cup powdered sugar
    • 1 cup whipped topping (like Cool Whip)
  • Chocolate Pudding Layer:
    • 2 packages (3.9 oz each) instant chocolate pudding mix
    • 3 cups cold milk
  • Topping:
    • 1 cup whipped topping
    • 1/2 cup chopped pecans
    • Grated chocolate or chocolate shavings (optional)

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine the flour, softened butter, and chopped pecans. Mix until well combined.
    • Press the mixture evenly into the bottom of a 9×13-inch baking dish.
    • Bake for 15-20 minutes, or until the crust is lightly golden brown. Allow it to cool completely.
  2. Make the Cream Cheese Layer:
    • In a medium bowl, beat the softened cream cheese until smooth.
    • Gradually add in the powdered sugar and continue to beat until fully incorporated.
    • Fold in the whipped topping until the mixture is smooth and creamy.
    • Spread the cream cheese mixture evenly over the cooled crust.
  3. Prepare the Chocolate Pudding Layer:
    • In a large bowl, whisk together the instant chocolate pudding mix and cold milk until thickened (about 2-3 minutes).
    • Spread the chocolate pudding over the cream cheese layer.
  4. Add the Topping:
    • Spread the remaining 1 cup of whipped topping over the chocolate pudding layer.
    • Sprinkle the chopped pecans evenly over the top.
    • If desired, garnish with grated chocolate or chocolate shavings.
  5. Chill and Serve:
    • Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until set.
    • Cut into squares and serve chilled.
