Chocolate Self-Saucing Pudding

Ingredients:

  • For the Cake:
    • 1 cup (125g) all-purpose flour
    • 1/2 cup (100g) granulated sugar
    • 2 tablespoons unsweetened cocoa powder
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 cup (125ml) milk
    • 1/4 cup (60g) unsalted butter, melted
    • 1 teaspoon vanilla extract
  • For the Sauce:
    • 3/4 cup (150g) packed brown sugar
    • 1/4 cup (30g) unsweetened cocoa powder
    • 1 1/4 cups (310ml) boiling water

Instructions:

  1. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
    • Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined.
    • Spread the batter evenly into a greased 9×9-inch (23×23 cm) baking dish.
  2. Prepare the Sauce:
    • In a separate bowl, mix the brown sugar and cocoa powder.
    • Sprinkle this mixture evenly over the cake batter in the baking dish.
  3. Add Boiling Water:
    • Carefully pour the boiling water over the top of the entire mixture. Do not stir.
  4. Bake:
    • Place the dish in the preheated oven and bake for 35-40 minutes, or until the center is set and the top looks cake-like.
  5. Serve:
    • Allow the pudding to cool for a few minutes before serving.
    • Spoon the pudding into bowls, ensuring each serving has some of the sauce from the bottom.
    • Optionally, serve with vanilla ice cream or whipped cream.
