These Cinnamon Roll French Toast Roll-Ups are a fun and delicious breakfast twist on two classics. Rolled-up slices of bread filled with buttery cinnamon-sugar, dipped in a vanilla egg wash, pan-fried until golden, and finished with syrup and powdered sugar — they’re warm, gooey, and irresistible!

  • 68 slices white or brioche bread (crusts removed)

  • ¼ cup unsalted butter, softened

  • ¼ cup brown sugar

  • 1 tablespoon ground cinnamon

For the Egg Mixture:

  • 2 large eggs

  • ¼ cup milk

  • 1 teaspoon vanilla extract

For Frying & Topping:

  • 1 tablespoon butter (for the skillet)

  • Maple syrup, cinnamon glaze, or honey (for serving)

  • Powdered sugar (for dusting)


Instructions

  1. Make Cinnamon Filling
    In a small bowl, combine the softened butter, brown sugar, and cinnamon into a smooth paste.

  2. Flatten and Fill the Bread
    Use a rolling pin to flatten each slice of bread. Spread a thin layer of cinnamon filling onto each slice, then roll up tightly.

  3. Prepare Egg Wash
    In a shallow bowl, whisk together the eggs, milk, and vanilla extract.

  4. Dip and Cook
    Heat a nonstick skillet over medium heat and melt the butter. Dip each roll-up into the egg mixture, then place seam-side down in the skillet. Cook for 2–3 minutes per side, turning to brown all sides evenly.

  5. Serve Warm
    Drizzle with syrup or glaze, and dust with powdered sugar before serving.
