Cinnamon Sugar French Toast Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted
  • 1 teaspoon ground cinnamon
  • Additional granulated sugar and cinnamon for topping

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  4. Combine Mixtures:
    • Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Add Butter and Cinnamon:
    • Stir in the melted butter and cinnamon until the batter is smooth.
  6. Fill Muffin Tin:
    • Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Cinnamon Sugar Topping:
    • Mix additional granulated sugar and cinnamon in a small bowl. Sprinkle the mixture generously over each muffin.
  8. Bake:
    • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool:
    • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
