Cinnamon Sugar French Toast Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup butter, melted
- 1 teaspoon ground cinnamon
- Additional granulated sugar and cinnamon for topping
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- Mix Dry Ingredients:
- In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the milk, eggs, and vanilla extract.
- Combine Mixtures:
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Add Butter and Cinnamon:
- Stir in the melted butter and cinnamon until the batter is smooth.
- Fill Muffin Tin:
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Cinnamon Sugar Topping:
- Mix additional granulated sugar and cinnamon in a small bowl. Sprinkle the mixture generously over each muffin.
- Bake:
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool:
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
