Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup (120g) sour cream or Greek yogurt
- 3 large ripe bananas, mashed
- 1/2 cup (85g) chopped walnuts or chocolate chips (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5 inch (23×13 cm) loaf pan with parchment paper, leaving some overhang for easy removal.
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter and sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Add Sour Cream and Bananas: Fold in the sour cream (or Greek yogurt) and mashed bananas until well incorporated. If you’re adding walnuts or chocolate chips, fold them in now.
- Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
- Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
Tips:
- For added texture, sprinkle some extra chopped nuts or chocolate chips on top before baking.
- You can also add a sprinkle of coarse sugar on top for a nice crunchy crust.
This banana bread is moist, flavorful, and perfect for breakfast, dessert, or a snack!
