Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meat Mixture:
    • In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for a couple of minutes until the breadcrumbs absorb the milk.
    • Add the ground beef, ground pork, chopped onion, bell pepper, minced garlic, egg, Worcestershire sauce, salt, pepper, and thyme or Italian seasoning. Mix well using your hands or a spoon until all ingredients are evenly combined.
  3. Shape the Meatloaf:
    • Lightly grease a cast iron skillet with a bit of oil or cooking spray.
    • Shape the meat mixture into a loaf shape in the center of the skillet, pressing it slightly to ensure it’s compact.
  4. Make the Glaze:
    • In a small bowl, whisk together ketchup, brown sugar, Dijon mustard, and Worcestershire sauce until smooth.

    • After 45 minutes, spread the remaining glaze over the meatloaf and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.

    • Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to settle.
