Instructions:
- Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then remove from the oven and let it cool.
- Make the Filling: In a large bowl, beat the cream cheese until smooth and creamy. Add 1 1/2 cups sugar, sour cream, heavy cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, beating on low speed and scraping down the sides of the bowl as needed. Mix in the flour until just combined.
- Bake the Cheesecake: Pour the filling over the cooled crust. Place the springform pan in a larger baking pan and add hot water to the larger pan to create a water bath (this helps prevent cracks). Bake for 1 hour and 15 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
