Classic Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 large potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup peas (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat the Olive Oil: In a large pot, heat the olive oil over medium heat.
  2. Cook the Aromatics: Add the chopped onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.
  3. Add the Vegetables: Add the sliced carrots, celery, and diced potatoes to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Add the Broth and Seasonings: Pour in the vegetable broth, then add the green beans, corn, peas, diced tomatoes, dried thyme, dried basil, bay leaf, salt, and black pepper. Stir to combine.
  5. Simmer the Soup: Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
  6. Remove the Bay Leaf: Discard the bay leaf before serving.
  7. Garnish and Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
