Chicken and Stuffing Casserole

This Chicken and Stuffing Casserole is a comforting, easy-to-make meal that combines juicy chicken breasts, flavorful stuffing, creamy sauce, and tender broccoli. It’s a crowd-pleaser that can be made with minimal effort, making it perfect for busy weeknights or family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup chicken broth

  • 2 garlic cloves, freshly minced

  • 1 small onion, cut into wedges (use 2 wedges)

  • 4 cups herb-flavored stuffing mix

  • 4 tbsp butter

  • 1 can cream of chicken soup

  • 1 pint sour cream

  • 8 ounces broccoli florets, frozen but thawed


Instructions

1. Prepare the Chicken

  • Preheat your oven to 350°F (175°C).

  • Season the chicken breasts with a little salt and pepper. In a large skillet, heat 1 tbsp of butter over medium heat. Cook the chicken breasts for 5-6 minutes per side, or until they’re cooked through. Remove them from the pan and set them aside to cool slightly. Once cool, shred the chicken into bite-sized pieces.

2. Cook the Aromatics

  • In the same skillet, melt the remaining butter. Add the minced garlic and onion wedges to the pan. Sauté for 2-3 minutes until the garlic becomes fragrant and the onion starts to soften.

3. Make the Broth Mixture

  • In a large bowl, combine the chicken broth, cream of chicken soup, and sour cream. Stir until the mixture is smooth and well-combined. Add the sautéed garlic and onions, then fold in the shredded chicken and thawed broccoli florets.

4. Prepare the Stuffing

  • In a separate bowl, combine the stuffing mix with 1 cup of hot water (or as instructed on the package). Stir well until the stuffing mix is moistened.

5. Assemble the Casserole

  • In a greased 9×13-inch casserole dish, spread the stuffing mix evenly at the bottom of the dish. Layer the chicken mixture on top of the stuffing, spreading it out to cover evenly.

6. Bake the Casserole

  • Cover the casserole with aluminum foil and bake for 25-30 minutes. After 30 minutes, remove the foil and bake for an additional 10 minutes to brown the top.

7. Serve and Enjoy

  • Let the casserole cool for 5 minutes before serving. It’s best enjoyed warm, with a side of your favorite vegetables or a crisp salad.


Tips & Variations

  • Add Extra Vegetables: Feel free to toss in some carrots, peas, or corn for more texture and flavor.

  • Use Rotisserie Chicken: If you’re in a hurry, you can easily substitute shredded rotisserie chicken for the freshly cooked chicken breasts.

  • Make it Lighter: For a lighter version, you can substitute low-fat sour cream and cream of chicken soup.

  • Cheesy Option: Add some shredded cheese on top during the last 10 minutes of baking for a cheesy twist!
