Cheesy Beef Enchiladas Recipe

Instructions

Step 1: Prepare the Filling

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook 1 lb of ground beef over medium heat until browned, breaking it up with a spoon as it cooks.
  3. Add the finely chopped onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  4. Stir in the taco seasoning and cook for an additional 2 minutes.
  5. Remove the skillet from heat and set aside.

Step 2: Assemble the Enchiladas

  1. Spread a thin layer of red enchilada sauce on the bottom of a greased 9×13 inch baking dish.
  2. Take one tortilla and place a generous amount of the beef mixture in the center. Sprinkle with a mixture of cheddar and Monterey Jack cheese.
  3. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and beef mixture.

  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
