Whether you’re baking for a Sunday brunch, a holiday gathering, or just because—this easy breakfast cake is your new go-to. Think of it as a cross between a cheesecake and a cinnamon coffee cake… sounds dreamy, right?
Let’s get baking!
Ingredients
For the Cake Batter:
-
½ cup (1 stick) unsalted butter, softened
-
1 cup granulated sugar
-
2 large eggs
-
1 tsp pure vanilla extract
-
2 cups all-purpose flour
-
1 tsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
1 cup sour cream
For the Cream Cheese Filling:
-
8 oz cream cheese, softened
-
¼ cup granulated sugar
-
1 egg
-
1 tsp pure vanilla extract
For the Cinnamon Streusel Topping:
-
⅓ cup light brown sugar
-
¼ cup all-purpose flour
-
½ tsp ground cinnamon
-
3 tbsp cold unsalted butter, cubed
Step-by-Step Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
Step 2: Make the Cake Batter
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
Add in the eggs one at a time, mixing well after each. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with sour cream. Begin and end with the dry ingredients. Do not overmix.
Step 3: Make the Cream Cheese Layer
In another bowl, beat together the softened cream cheese, sugar, egg, and vanilla until smooth and creamy.
Step 4: Assemble
Spread half of the cake batter evenly into the prepared pan. Pour the cream cheese mixture over the batter and gently spread it out. Top with the remaining cake batter.
Step 5: Add the Streusel
Combine the brown sugar, flour, and cinnamon in a small bowl. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle evenly over the cake.
Step 6: Bake
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean (don’t mistake the cream cheese filling for raw batter!). Allow to cool before slicing.
